VEGVAN

✨ Why did you start a food truck?
The idea of a Food Truck came pretty quickly and pretty recently. I transitioned to a plant-based lifestyle over 10 years ago so my passion for cooking was sparked then - discovering the plethora of foods and preparation methods within vegan cuisine. I trained, worked, and studied in the food sector during my time living in Amsterdam from 2012 until early 2020 before returning back to NZ with our young family. Cut to 2022 -a pandemic, another baby, and settling into our new home - Aotearoa - I thought; What am I gonna do to be flexible enough around my family, to work again in a creative area whilst not being too reliant on a permanent position & overheads. So Hello VEGVAN!

What was your biggest challenge?
I think the logistics of it all. I'm naturally a very creative 'dive in' kind of person. So that's what I did - birthing the aesthetics of VEGVAN - which in a way work best for me to bring my vision to life and then figure out the ins' n'outs of how to do it after. Surely enough it pieced itself together and most certainly is still evolving and improving from the experiences as we go on.

What advice would you give your younger self (before you started your food truck)?
Phew. So much. I'd say tho; to take the pressure off the timeline - that there's plenty of time and you can keep reinventing your ideas of "what you wanna do" - and to hold your own goals not compared to anyone else. And just enjoy where you're at because a new season is always coming.

What are your plans for the future?
For now, seeing how VEGVAN evolves. Travel plays a big part in my story to date, however at the moment with a young family, it's nice to find some roots - network with like-minded people - get involved with epic events locally & see where it goes from there
